Eggcellent!

GARDEN SALMON FRITTATA
1 serving
Ingredients:
§ 2 Eggland's Best eggs
§ 1 Tbsp basil, fresh chopped
§ 1 Tbsp green onions, chopped
§ 1 Tbsp Tarragon, chopped
§ 2 Tbsp romano cheese, freshly grated
§ 1 clove garlic, minced
§ 1/8 cup Spinach, frozen or fresh
§ 2 oz. Salmon filet, thinly sliced
§ 2 slices Whole grain flatbread, toasted

Mix Eggland's Best eggs with all ingredients except garlic, salmon and flatbread. Turn on stove to medium high heat. Place garlic in omelet pan and cook for 30 seconds. Add egg mixture and cook until bottom sets. Place under broiler for 1 to 2 minutes to set top. Place thinly sliced salmon piece atop cooked egg mixture. Fold in half and place between toasted flatbread slices. Cut in half diagonally. Serve and enjoy!

Queen Latifah Holds Online Search for Next 'CoverGirl'



Queen Latifah is looking for everyday women of color, ages 18-48, to appear in an advertisement for her own line of cosmetics, the CoverGirl Queen Collection. Those wishing to be considered can log on to Everywomanisaqueen.com to submit an entry from January 10th through January 31st. All who enter will be required to submit a photo and a brief statement about why they feel that they too are a “Queen.”

Last year CoverGirl held the contest in person in NYC, and over 3,ooo women showed up! Because it was SO successful, we are opening it up so that even more women are able to enter.

Queen Latifah will judge the online search and will select up to 5 winners to appear in a CoverGirl Queen Collection advertisement that will be seen in the June issue of Ebony magazine.
